• Sancorganic has more than 500 hectares of available land and has already planted over 100,000 organic pistachio trees between its farms in Valdetorres de Jarama (Madrid) and Cebreros (Ávila). Its goal is to reach 200,000 pistachio trees and position itself as one of the European benchmarks for this crop.

The agricultural company Sancorganic cultivates organic pistachios on two farms located in Valdetorres de Jarama (Madrid) and Cebreros (Ávila) covering a total of more than 500 hectares and already has over 100,000 trees planted. The company controls the entire cycle, from the agronomic management of the plantations to the processing and packaging of the fruit at its plant in Valdetorres de Jarama. Its development plans include the projection of reaching 200,000 pistachio trees in the coming years, which will position it as one of the benchmark organic pistachio plantations in Europe.

The project progresses in parallel with the expansion of the Spanish pistachio sector, which in recent years has expanded its production map beyond Castilla-La Mancha towards regions such as Madrid, Castile and León or Extremadura.

In fact, in just ten years, the pistachio sector in Spain has experienced exponential growth. In 2015, the Iberian Peninsula barely had any weight in the global market, with some 8,000 hectares planted and a still symbolic production. A decade later, according to data from the Ministry of Agriculture, Spain reached 85,845 hectares in 2025, multiplying the cultivated area by more than ten and consolidating itself as one of the markets with the highest growth and international projection.

In this environment of strong development, Sancorganic has found a favorable environment in the peninsular interior, with cold winters and dry summers, and responds to the growing international demand for a dried fruit with added value.

Sancorganic, producer of organic pistachios with double certification
A fundamental element within organic agricultural production is certification. On the Cebreros farm, Sancorganic is certified with the Castilian-Leonese Certifood seal, while both the plantation and the processing plant in Valdetorres de Jarama operate under the certification of the Organic Agriculture Committee of the Community of Madrid (CAEM). The double accreditation guarantees the organic traceability of the product from the tree to final packaging.

Sancorganic's organic pistachio cultivation is supported by advanced agronomic techniques. The plantations are drip-irrigated and the ground is equipped with sensors to measure soil moisture, which allows adjusting the water supply to the actual needs of the tree. The company applies regenerative practices such as plant cover, controlled through managed grazing with a flock of more than 700 sheep which, additionally, fertilizes the land naturally.

As for processing, the Valdetorres de Jarama plant integrates the phases of reception, destemming, peeling, drying and packaging in big bags intended for professional operations. The activity at the processing plant is concentrated at the time of harvesting the fruit and it is necessary to process a large amount of product in a very short time to guarantee maximum quality. It should be noted that this facility is sized to be capable of taking on the entire production when the plantation reaches 200,000 pistachio trees. In addition, the plant will incorporate new functions and capacities as the plantations progress towards their full productive performance.

The Spanish pistachio sector, in full expansion
Pistachio cultivation has grown strongly in Spain in recent years, with an increasingly broad production map. Castilla-La Mancha concentrates the largest area of pistachios in the country, with a growing presence of the crop in Extremadura, Andalusia and Castile and León. The incorporation of farms in the Community of Madrid, such as the one in Valdetorres de Jarama, adds a new area to the production map.

Pistachio cultivation in Spain has gone from being a minority alternative to consolidating itself as a sector with its own weight within fruit growing. The consulting firm Roland Berger recently pointed out that Spain could be producing 99,000 tonnes of pistachios by the year 2030 and reach 143,000 tonnes in 2035, considering the current growth rate of this crop in the Spanish market.

In this context, the organic modality is gaining ground within the overall sector. The absence of synthetic chemical treatments, the improvement of soil fertility and certified traceability respond to a growing demand in European markets. The positioning of organic agricultural companies within the segment reinforces the differentiation of the national product in specialized channels.

Soil, water and energy under control in the Sancorganic model
Sancorganic structures its operation around four measurable axes: soil, water, biodiversity and energy. The plant cover aims to reduce erosion and increase soil organic matter, with external monitoring carried out by an independent certifying entity that will evaluate the agronomic evolution of the soil over time.

Water management is supported by drip irrigation and soil sensing. The company has a concession from the Tagus Hydrographic Confederation on the Jarama river and is processing an additional concession to tap several available wells on the farm, with the aim of reinforcing water availability without compromising consumption efficiency.

On the energy front, the Valdetorres de Jarama facilities operate under a self-consumption scheme with solar panels and batteries, with the capacity to feed the surplus into the electricity grid. The continuous measurement of the four axes aims to reduce the external dependence of the farm and guide technical decisions towards verifiable parameters, in line with Sancorganic's approach of incorporating sustainability as an agronomic variable in organic pistachio production.
